Speculoos cheesecake

This plant-based cheesecake is totally appropriate for autumn. First, sugar-free spiced nuts are baked for the topping, recipe from Charlotte van Loo's book "Echt leven door echt eten". Then a gluten-free base, with a blissful speculoos filling made of cashew nuts, coconut cream and coconut oil. Perfect for Sinterklaas!

Carrotcake

Carrot cake is and remains a classic. My version is a healthier variant of the traditional cake with eggs, flour and sugar. But full of carrots, almond flour, whole-wheat spelt flour, almond milk and agave with a topping of cashew nuts. A delicious and healthy treat.

Ingredients*: carrots, almond flour, wholemeal spelt flour, gluten-free unsweetened oat milk, chia seeds, cream of tartar, agave, orange zest, sunflower oil, cider vinegar, cinnamon, spice. Topping*: cashew nuts, oat milk, coconut oil, agave, lemon zest

Topping*: cashewnoten, havermelk, kokosolie, agave, zeste van citroen

This chocolate crumble cake is a responsible choice for chocolate lovers. By using cocoa powder and dark chocolate drops, you still get a full chocolate flavour. The whole-wheat spelt flour provides a healthy base and the crumble of pecans and oatmeal finishes it off. This cake is the quickest because all the ingredients are in stock. Also available in gluten-free version with almond flour and buckwheat flour, ask for the price.
